Spicy Chai Cookies
As I post this recipe in late February the snow is falling. Work and school canceled for a snow day #squeee. Timp is wrapped in grey clouds that are lovingly adorning her in a blanket of much needed snow. The snow quiets the noises of the city and imbues the trees outside my window in a ethereal light. I love days like this. The only thing that can improve the situation might be a soft warm cookie imbued with all the comfort and warmth of chai. I could be wrong but you won't know until you try.

Recipe
2 cups old-fashioned rolled oats
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons chai base, ground
1 cup (2 sticks) butter, softened
1 cup light brown sugar
½ cup sugar
2 large eggs
1 teaspoon vanilla extract
Directions
Preheat oven to 350°.
Roll dough into 1-inch balls and flatten.
Bake for 10-12 minutes until the bottoms begin to brown.
Allow to cool 1-2 minutes before transferring to a cooling rack.
